I have had a cravin' for something sweet but I don't want cacao..then it hit me!
Coconut Pudding
1 C fresh young coconut meat*
juice of 4 lemons
7 dates, soaked for 20 minutes
1/2 t vanilla extract or 1 inch vanilla bean
Combine all ingredients in a food processor and puree. Serve pudding in cups.
