So there's this sport called football. Many individuals enjoy getting together eating and drinking and cheering for their favorite team or just the better of the two for the day. You ever find yourself looking at those damn nachos and wish they were raw and vegan. No, then stop reading. Yes, ok here is the RECIPE from Ms. Mimi Kirk's Live Raw.
Corn Chips:
6-8 ears of corn
1/2 cup ground golden flax seed
1/4 cup onion chopped
1/8 teaspoon salt
1/4 teaspoon of combination of cumin, oregano and garlic powder
In food processor, mix corn, onion and salt. Process until on the smooth side. Add ground flax seed and pulse blender.
Spread thin with rubber spatula on nonstick dehydrator sheet. Wet the back of the spatula and smooth out mixture evenly. Pick up tray and lightly tap it down on countertop, turning and tapping to aid in spreading mixture. Mixture can also be dropped by tablespoons onto nonstick sheet to create little rounds a bit thicker. Dehydrate for 24 hours or until dry and crispy. Flip onto mesh tray halfway through dehydrating and cut into desired chip size.
Cheese sauce:
2 cups cashews, soaked for 4 hours
1 red bell pepper seeded and cut in half
3 tablespoons of nutritional yeast
1/8 teaspoon tumeric
1/8 teaspoon paprika
1 clove garlic, cut in half
1/8 teaspoon salt, or 1 tablespoon coconut aminos/tamari/ nama shoyu
1 cup or more of water.
Drain and rinse cashews. Place all ingredients in your high-powered blender. Add 1/2 of the water and blend. Add more water as needed to make pourable, smooth cheese. Taste for seasonings especially salt, and add more if needed.
Heat cheese in glass container in dehydrator set at 105-110 degrees.
