WATERMELON SOUP
- 5 C watermelon, seeded and cubed
- 2 C mango, peeled and diced
- 1/4 C lime juice
- 3 TB fresh mint, chopped
- 1TB fresh ginger, minced
- 1TB honey
- 1/8 tsp ground cardamom
Place 3 1/2 c watermelon and 1 c mango in a food processor and blend until smooth. Dice up the remaining 1 1/2 cups watermelon and 1 c mango into tiny pieces and add to the puree. In a small, separate bowl, combine the lime juice, mint, ginger, honey and cardamom. Add this to the previous mixture and stir well. Chill and serve.
