Q is for Quercetin

What the heck is quercetin?

Quercetin belongs to a group of plant pigments called flavonoids that give many fruits, flowers, and vegetables their color.

Flavonoids, such as quercetin, are antioxidants -- they scavenge damaging particles in the body known as free radicals, which damage cell membranes, tamper with DNA, and even cause cell death. They also help keep LDL ("bad") cholesterol from being damaged, which scientists think may contribute to heart disease. In test tubes, quercetin has strong antioxidant properties, but researchers aren't sure whether taking quercetin (and many other antioxidants) has the same effects inside the body.

Quercetin is sometimes promoted to help prevent or treat different types of cancer. It has also been promoted to help with the symptoms of chronic prostatitis (swelling of the prostate gland) and to relieve some of the neurologic complications of diabetes.

Quercetin acts like an antihistamine and an anti-inflammatory, and may help protect against heart disease and cancer. Quercetin can also help stabilize the cells that release histamine in the body and thereby have an anti-inflammatory effect.

Time for Dessert

So now lets get that Thanksgiving classic made! Here's some yummy Pumpkin PIE magic!

Pumpkin Pie

Yield 6-8 servings

Crust

2 cups pecans, soaked 1 hour

2 cups unsweetened shredded dried coconut

1 tablespoon raw coconut oil

Place pecans in a food processor fitted with S blade, and process into a fine meal. Gradually add the dried coconut and coconut oil, and process until well blended. Press into a 9-inch glass pie plate.

Filling

3/4 cup almonds, soaked 12-48 hours and blanched

3/4 cup pitted dates, soaked 1 hour

1/4 cup pine nuts, soaked 1 hour

2 1/2 cups blended raw pumpkin pulp

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/2 teaspoon ground ginger

1/8 teaspoon ground cloves

Process the almonds, dates, and pine nuts through a Champion Juicer fitted with the solid plate. Transfer to a large bowl, and stir in the pumpkin pulp. Add the cinnamon, vanilla extract, ginger, and cloves, and mix well. Spoon into the prepared crust. Refrigerate for 2-3 hours before serving.

Cream Topping

1 cup cashews, soaked 1 hour

2 tablespoons agave nectar

Combine cashews and agave nectar in a blender, and process until smooth, thick, and creamy. Add a small amount of water, as needed, to facilitate blending and achieve the desired consistency. Refrigerate for 2-3 hours before serving. Place a dollop of the topping on each slice of PUMPKIN PIE!

Cranberry Sauce

Preparation 20 min.

Yields 8-10 Servings

Cranberries need plenty of aded sweetness to mellow their tartness; for this we rely on wholesome dates and juicy oranges. This is an amazingly simple recipe to prepare, and it is alway a big hit, even with those who are used to more conventional holiday fare. Another bonus is that it can be made two to three days in advance.

1 teaspoon orange zest (opitional)

1-2 oranges

1 package (12 ounces) fresh cranberries, rinsed well well and drained

4 pitted dates, or more as needed

If using, remove the orange zest before juicing the oranges. Transfer the orange zest, orange juice, and all the remaining ingredients to a blender and process just until chunky. Taste and blend in more dates, one at a time, if additional sweetness is needed.

If you prefer, an equal amount of frozen cranberries may be used instead of fresh cranberries. Thaw them before processing.
