That greens are one of the most important food groups is no secret.
Kale, collard, lettuce, mustard greens, dandelion, spinach, swiss chard, the variety is endless. Every green has a its own flavor and texture to explore.
One way to always enjoy eating your greens is to try mixing different greens together, and pimp it with extras and of course a delicious dressing.
Add vegetables to your salad, such as cucumber, bell pepper, carrot, parsnip, jicama, broccoli, brussel sprouts, radishes, beet etc.
Slice them, chop them, shred them, make it interesting and different.
Herbs and sprouts are extremely nutritious and will bring great flavor. Peppermint, cilantro, parsley, oregano, thyme, and sprouts such as sunflower, broccoli, alfalfa, bean, chickpea, radish, lentil etc.
Mix some Sea Spaghetti or Kelp Noodles under your salad.
Add nuts and seeds to your salad.
Almonds, pili, pecans, walnuts, macadamias, cashews, sunflower seeds, pumpkin seeds, hemp seeds etc.
Another delicious add on are fresh and dried fruits, pick you favorites from cherries, raisins, cranberries, figs, mango, mulberry, caper berry, goji berry, and so on.
Add on and on top sprinkles: cheezehound cheese, nutritional yeast, Rawmesan, spirulina and chlorella powder, sprouted nut and seed mixes, bee pollen, kale chips, raw cracker crumbles, coconut chips, olives and pickled garlic.
Complete your salad with a flavorful dressing. A creamy sauce, a light vinaigrette, mustard-, fruit or vegetable based.
Here are two very easy to make dressings for you:
Raw Vegan Caeser Dressing
This vegan inspired classical dressing is best served with romaine and kale, massage the kale with the dressing so the greens become softer.
1/2 cup raw cashews, soaked for two hours
1/4 cup water
3 tablespoon Bragg's Nutritional Yeast
1 tablespoon lemon juice
1 tablespoon mustard
1 tablespoon Nama Shoyu soy sauce
1 small garlic clove
1 tablespoon capers
salt and pepper to taste
Place all ingredients in a blender and blend till smooth.
Add some extra nutritional yeast on top or the amazing Rawmesan.
Cilantro Apricot and Mango Dressing
This dressing is great for kale and spinach alike. The fruits are nice balance of sweet and sour, and a fresh mango make it creamy.
1 fresh, ripe mango
5 dried apricots, cut into qarters
1 tablespoon Bariani olive oil
1 tsp lemon juice
salt and pepper to taste
small handful of fresh chopped cilantro, or parsley
Peel the mango and place into your blender, add the apricots, olive oil and salt/pepper, blend till smooth.
Now add the cilantro and pulse.
