Parsnip Soup
This soup is just perfect for this time of year.
Parsnip is in season and the camu camu will give an extra boost to your immune system.
Ingredients:
4 medium parsnips
1 Tbsp coconut butter
1 heaped tsp maca
1 heaped tsp camu camu powder
3 Tbsp liquid aminos/soy sauce
1 Tbsp lemon juice
Peel & chop the parsnips and then place in a saucepan of water.
Bring to the boil and then simmer until parsnips are soft.
Turn off heat, add the coconut butter and blend.
Add the maca, camu-camu, aminos/soy sauce and the lemon juice and blend again.
I love to top this soup with some hemp seeds!
Camu Cider
So much Vitamin C in one cup it will bring the sun back into the winter blues.
Ingredients:
½ tsp Ginger Powder
¼ tsp Allspice Powder
1 tsp Camu camu powder
4 Cup Apple Juice
1 Cup Orange Juice
1 tsp Cinnamon Powder
Mix together all ingredients except the camu camu together in a pot, and gently warm over low heat for 2-3 minutes until heated through.
Remove from heat, add the camu camu powder and mix well. Serve immediately – makes 4 cups.
Camu Camu Lemonade
Ingredients:
2 Tbsp Camu Camu powder
1 to 2 tsp Stevia powder
Juice from 1 lemon
2 Tbsp Maple Syrup or Raw Honey
1 quart water
Combine all ingredients in a blender and briefly blend. Add additional sweetener if desired.
Chill before serving.
